Ingredients
 1 pack of bacon
 1 garlic clove
 50 g of mushrooms
 200g of homemade pesto
 200ml of white wine
 2 tablespoons of crème fraiche
 20g of parmesan
 Seasoning to taste

Method
 Trim any fat off the bacon and thinly slice.
 Fry the bacon and crushed garlic together.
 Meanwhile thinly slice the mushrooms and once the bacon has browned, add to the saucepan.
 Once the mushrooms have softened add the pesto sauce and allow to cook for 5 mins.
 Add the wine and simmer until the wine has reduced.
 Stir in the crème fraiche and parmesan.
 Season to taste. (don’t add salt as the bacon is salty enough)
 Leave the sauce to simmer whilst you cook the pasta.
