1 pack of bacon
1 garlic clove
50 g of mushrooms
200g of homemade pesto
200ml of white wine
2 tablespoons of crème fraiche
20g of parmesan
Seasoning to taste
Trim any fat off the bacon and thinly slice.
Fry the bacon and crushed garlic together.
Meanwhile thinly slice the mushrooms and once the bacon has browned, add to the saucepan.
Once the mushrooms have softened add the pesto sauce and allow to cook for 5 mins.
Add the wine and simmer until the wine has reduced.
Stir in the crème fraiche and parmesan.
Season to taste. (don’t add salt as the bacon is salty enough)
Leave the sauce to simmer whilst you cook the pasta.
