Do you have lots of tomatoes from the garden, too many to eat! Here’s a recipe to use them some of them.
1 galic blub
1 tsp coriander seeds
1 tsp mustard seeds
1 tsp turmeric
1 tsp ground ginger
1 cinnamon stick
1 tbsp curry powder
1/2 sweet potato
600g mixed tomatoes, blitzed
50ml boiling water
1 vegetable stock cube
1/2 can of chickpeas and chickpea water
Saute the onion and garlic bulb in a pan.
Whilst cooking toast the coriander seeds and mustard seeds until fragrant.
Then add the remaining spices to the frying pan.
Add the sweet potato and spices to the onion and garlic.
Next add the blitzed tomatoes, boiling water, chickpeas and their water.
Bring to the boil and simmer for 45mins stirring ocassionally.
Serve with rice or couscous.
